- 2 tbsp coconut cream
- 1 tsp coconut flour
- 1/2 tsp baking powder
- 1/2 tsp stevia (optional)
Heat up your waffle iron, combine ingredients, and enjoy!
Depending on how sweet you like your waffle, you may or may not need to add stevia. If you’re in need of just a little sweetness, a pinch of stevia won’t hurt. But, beware not to add too much otherwise it will increase the waffle’s carb count.
Egg Casserole
This egg casserole recipe is great for making ahead and eating throughout the week.
Try adding some of your favorite high fat toppings including avocado or turkey breakfast sausage.
Strawberry and Avocado Smoothie
This tropical smoothie is high in fats from the avocado and coconut. It’s also sweet from the strawberries. Strawberries are are a keto friendly fruit option as they are low sugar and low carb.
Ingredients (makes 1 smoothie):
- 1/2 ripe avocado
- 1 cup frozen strawberries
- 1/2 cup unsweetened almond milk
- 1.5 tbsp coconut cream

Keto Meatball Zoodle Skillet
For all the pasta lovers out there, this zoodle recipe with meatballs is a hit.
If you’re in a time crunch, you can use jarred tomato sauce and prepackaged spiralized zoodles.
Thai Chicken Satay
Chicken satay is peanuty, creamy, and delicious. It’s a great main dish or appetizer.
For the dipping sauce, you can purchase a jarred Thai peanut sauce. The WATCHAREE’S Thai Peanut Sauce is my favorite.
Ingredients (makes 4 servings):
- Wooden skewers
- 1 lb skinless boneless chicken breasts
- 1/2 cup coconut milk
- 3 cloves garlic, minced
- 1/4 tsp ground ginger
- 1/2 tsp curry powder
- 1/4 tsp paprika
- 1/4 tsp tumeric powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions:
- Chop chicken into small, 1-inch chunks
- Combine chicken and all other ingredients in a large bowl, covering chicken completely
- Soak chicken for at least 1 hour
- After 1 hour, preheat oven to 400 degrees
- Thread chicken chunks onto wooden skewers and bake for 20 minutes or until chicken reaches 165 degrees
- Remove chicken from oven and serve with Thai peanut sauce
Teriyaki Salmon
Many jarred teriyaki sauces are loaded with sugar and high in carbs. However, this salmon recipe comes with a homemade teriyaki sauce that omits a lot of the sugar.
Salmon is naturally very high in good fats. A 3 oz serving has 2.6 grams of saturated fat and 6.6 grams of mono and polyunsaturated fats. These good fats do everything from helping maintain a healthy blood sugar and reduce high blood pressure.

Keto Peanut Butter Bars
I have never met a person in my life who doesn’t like peanut butter and chocolate. And, this makes sense considering how delicious they are together.
Ingredients (makes 16 servings):
- 4 tbsp coconut oil
- 4 oz. sugar free dark chocolate chips
- 1 cup sugar free peanut butter, melted
- 1 tsp vanilla extract
- 2 cups peanut flour
- 1/2 cup liquid stevia (more or less depending on how low carb you want it)
Directions:
- Combine peanut butter, vanilla, peanut flour, and liquid stevia in a bowl and form into a dough
- Put a layer of parchment paper over an 8×8 baking sheet and evenly press dough into pan
- Combine chocolate chips and coconut oil in a small saucepan
- Heat the saucepan at a very low heat level and mix until liquidy
- Pour melted chocolate evenly over the dough in the baking sheet
- Cool in refrigerator for 1 hour minimum
Keto Tortilla Chips with Guacamole
Regular tortilla chips are high in carbs. But these keto tortilla chips use almond flour and cheese to reduce the carb count.
Pair the chips with some simple, homemade guacamole.
Ingredients (makes 4 servings):
- 2 avocados
- 1/2 lime, juiced
- 2 tbsp fresh cilantro
- 1/4 cup white onion, diced
- 1 roma tomato, diced
- 1 garlic clove, minced
- salt and pepper to taste

Chocolate Avocado Pudding
